Turkey Shepard’s Pie with Horseradish Cheddar Mashed Potatoes

Serves 4-6.

Filling Ingredients:

1 lb. ground turkey

1 tablespoon olive oil

½ teaspoon kosher salt

½ teaspoon freshly ground pepper

2 teaspoons worcestershire sauce

1 medium red onion, diced

2 celery stalks, diced

1 large carrot, diced

½ teaspoon celery salt

1 cup low-sodium chicken or beef broth

1 bay leaf

Instructions:

In a large frying pan, saute the turkey with olive oil and season with salt, pepper and worcestershire sauce. Cook over medium heat until no longer pink, about 8-10 minutes. When meat is browned and cooked all the way through, remove from pan and reserve. Add the onion, celery and carrot, seasoning with celery salt. Cook for 5-8 minutes until softened. Add the cooked turkey, broth and bay leaf. Simmer over low heat for 5 minutes, or until broth has reduced by half.

Place the meat mixture in the bottom of a 2 quart baking dish. Gently spread the mashed potatoes on top of the meat mixture.
