Ingredients
- 12 oz (350 g) spaghetti
- 6 slices of bacon;
- 2 medium tomatoes
- 8-10 button mushrooms
- 2 garlic cloves
- 2 thyme springs
- 2 cups fresh spinach
- ½ chicken breast
- ½ cup thick cream
- 1/3 cup grated parmesan
Instructions
- Season chicken breast with salt and pepper, cook over medium heat until cooked through. Slice into strips. Brown and chop bacon.
- In another pan fry onions until softened, add diced mushrooms and tomatoes, let the excess liquid evaporate. Season with salt and thyme, combine with spinach.
- Cook pasta according to package directions. Mix pasta, vegetables, chicken and bacon with cream and cheese. Toss until spaghetti is fully coated with creamy sauce. Serve immediately.
