You will need:
For the rolls
- 8 egg roll wrappers
- 3 medium avocadoes, cubed
- ¼ cup chopped red onion
- ¼ cup chopped sundried tomato
- 2 tablespoons chopped cilantro (aka coriander)
- Juice from ½ a lime
For the dipping sauce
- Non-fat plain Greek yogurt
- Cilantro
- Garlic salt seasoning (contains dried garlic, dried cilantro, dried onion)
- Squeeze of lime juice
What's really great about this recipe is that the rolls are so much healthier than those you get at restaurants because these are baked, not fried, so you get the yummy goodness without the guilty conscience. And since you only need six simple ingredients and the baking process is such a cinch, there's really no excuse not to make these! You can also play around with dipping sauces – a sweet chili or sweet and sour sauce would also taste delicious.
I absolutely love sundried tomatoes, but I know that everyone doesn't share my love, so feel free to substitute those with regular tomatoes or perhaps even bacon, because, you know, bacon makes everything taste better! Just stick to lean bacon.
