Delicious Four Berry No Bake Graham Cracker Bars Recipe

Many dessert recipes call for over-the-top sweet ingredients. And these bars get their sweetness from some sugar – but really its the berries that reign supreme. Blueberries, blackberries, raspberries and strawberries, shine through with the natural sweetness for a dessert that you won’t feel guilty about enjoying.

These bars are so simple and scrumptious, that you’ll want to make them once a week. Maybe twice a week. Who knows, maybe even more.

And although they’re easy to make, they do take time to set up. But don’t worry. It’s completely hands off. You could start the crust the night before, and mix the filling in the morning for a wonderful dessert that night.

Feel free to use frozen berries too in the winter. Not only are they less expensive, they’re typically frozen the same day their picked, so their quality is fantastic.

Also, even though these are four berry bars, if you’re a big fan of one type of berry you could just omit the other types of berries.

Delicious Four Berry No Bake Graham Cracker Bars Recipe

Five Berry Graham Cracker Bars

Hands on time: 10 minutes

Hands off time: 12-20 hours

Makes 4 large bars.

Ingredients:

1 cup crushed graham crackers (about 6)

2 tablespoons unsalted butter, melted

2 packages cream cheese or neufchâtel, room temperature

2 ½ cups mixed berries (blueberries, strawberries, raspberries and blackberries)

½ cup confectioners sugar

1 tablespoon lemon juice

Instructions:

Combine the graham crackers and melted butter in a medium bowl. Once combined, press the mixture into the bottom of a 9×9 baking pan. Freeze overnight.

Beat the cream cream until soft with a hand mixer on low, about 2 minutes. Add the berries, confectioners sugar and lemon juice, and beat until smooth, about 3 minutes.

Spread the mixture over the crust, and freeze for 4-8 hours.

Serve immediately, and enjoy!
